With Thanksgiving coming up, I thought I'd give out this recipe. I love it. I made it tonight, in fact! You could probably make this P1 friendly by changing the egg to egg white (or 2 egg whites even). This is also good with mushrooms added. When baked in a cast iron pan, it gets yummy little crunchy edges. ************* Brown Rice Dressing 3 c. brown rice cooked 1 c. diced onion 1/2 c. diced celery 1/2 tsp. poultry seasoning 1/4 tsp. paprika 2+ tsp. dried sage (3-4 tsp fresh) 1/4 c. dried parsley (1/3+ c. fresh) 1/2 tsp. salt 1/2 tsp. pepper 1/4 c. milk 1 cup broth 1 egg Saute onion and celery. Over low heat, add and mix in spices, except for salt and pepper. Add and mix in rice. Take off heat, add salt and pepper. Taste for spice mixture. Cool slightly. Combine milk, broth, and egg. Stir into rice mixture. Bake at 375 for 20 -30 min.
