Butternut Pumpkin (Squash) & Sweet Potato Soup! (Phase 1) E-mail
2lbs butternut pumpkin seeded, peeled and cut into chunks
2lbs sweet potato peeled and cut into chunks
1 brown onion chopped
Put above ingredients into a large soup pan
Add enough water to cover vegetables
Add 1 tablespoon chicken stock powder (or equiv. stock cubes)
1 tsp cumin
ground black pepper
Bring water to boil and let vegies simmer til very tender.
When cooked blend with stick blender or transfer to blender - blend til smooth
serve in soup bowls add 1 tsp plain low fat yoghurt and some chopped chives and DIG IN!!
(you can make it without the cumin if you'd like!)
(add salt to taste after cooking)
