Green Bean Rice

Ingredients:
2 cups cooked brown rice
1 can drained green beans
1 minced/chopped garlic clove
3 slices red onion (halved)
1 tomato diced/chopped
1 cup chopped steamed broccoli and cauliflower mix
2 tsp Olive Oil
3 Tbsp lo fat vinaigrette

Chicken or Shrimp (optional depending on your phase, even Turkey might be good or baked fish)

Seasonings I used: Italian Seasonings, Oregano, Ginger powder, Sea Salt, Pepper, Garlic powder, and Onion powder

Directions:
Preheat the oven to 425 degrees. Sauté the green beans, onions and garlic until onions are clear.
Mix the rice, tomatoes, green beans, garlic, onion and vinaigrette together. After completely mixed together put the broccoli and cauliflower on top and bake for 10-15mins. I kind of broke up the broccoli and cauliflower on top of the mixture and not leaving it whole.
