Hearty Vegetarian Stew (Phase 1) E-mail
I have been thumbing through my WW "Turnaround" Cookbook. A lot of the recipes, for the Core Program, including the Sweet Potato Fries circulating, are Fatsmash friendly. This one is great!

2 tsp olive oil
2 celery stalks, sliced
1 carrot, sliced
1 onion, chopped
3 garlic cloves, minced
1 15oz can diced tomatoes
1 cup canned red kidney beans rinsed and drained
1 cup canned white beans, rinsed and drained
1/2 cup reduced-sodium vegetable broth
1 1/4 cups diced firm tofu
1 Tbsp. fresh cilantro, chopped
1/2 tsp. salt
1/4 tsp. ground pepper

1. Heat the oil in a large saucepan over medium heat. Add celery, carrot, onion, and garlic. Cook, stirring occasionally until softened, about 10 minutes.
2. Stir in the tomatoes, kidney beans, white beans and broth; bring to a boil. Reduce the ehat and simmer, covered, stirring occasionally, until the flavors are blended, about thirty minutes. Add the tofu, cilantro, salt and pepper; cook, stirring occasionally, until the tofu is heated through, about 5 minutes.

Serves 4
