2 ou. shiitake mushrooms or whatever you have 10 cups broth 2 tbslp e.v.o.o. 1/3 cup ginger 2 tblsp garlic 3/4 tsp crushed red pepper 1/2 lb tofu (extra firm) 1/4 cup lime juice 3 tblsp corn starch 1 tsp sesame oil 2 tblsp scallions
Combine mushrooms and broth and simmer 30 min. On side heat oil add ginger, scallion, garlic, red pepper, and cook 2 min. then add to soup simmer 30 min. add tofu (cubed). In small bowl add lime juice and corn starch and stir then mix it in your soup and boil, then simmer 5 minutes. Add sesame oil. (Another recipe I have calls for bean sprouts so since I had it, I also added a handful of that in this recipe)
