Soybean, Rice and Lentil Salad (Phase 1) E-mail

Ingredients :

1 can whole soybeans (15 ounces) drained and rinsed available in natural food stores
1 cup cooked brown rice
1 cup canned kidney beans drained and rinsed
1/2 cup canned lentils drained and rinsed
1/4 cup nonfat honey mustard salad dressing
1/8 cup red onion chopped
1/4 tsp black pepper
1/8 tsp salt
4 cup red leaf lettuce torn

Method :

* 1. Combine ingredients in a large bowl, except lettuce.
* 2. Let set at room temperature for 30 minutes. Serve over lettuce.

* Serving size: 1 cup bean mixture and 1 cup lettuce.
