2 lbs sweet potatoes, peeled. 1 Tbsp. olive oil ¼ tsp. salt ¼ tsp. freshly ground pepper
1. Preheat oven to 450F. Halve potatoes and cut into ½ inch wedge. Toss with the oil, salt and pepper in medium bowl. 2. Arrange the potatoes in a single layer on a nonstick baking sheet. Bake, turning once until browned and crip. About 35-40 minutes. Serves 4.
** This tastes great with plain yogurt mixed with a squirt of lime juice for a dip.
