Tamale Soup minus the Tamales (Phase 1) E-mail

1/4 cup celery diced
1/4 cup carrot diced
1 cup onion diced
1 tblsp extra virgin olive oil
1 tsp oregano
1 tsp cumin
2 garlic cloves minced
4 cups stock (chkn or veg)
1 cup diced tomato with juice
1/2 cup tomato puree
2 whole zucchini diced
1or 2 cans corn ( I usually add one regular and one sweet)
1 can garbanzo beans
1 tsp adobo paste from canned chipolte peppers (mexican food section at the store not hot sauces)

Gently sweat celery,carrot and onion in olive oil until soft, with a lid on. Add oregano, cumin and garlic sweat a few more minutes. Add stock and simmer 30 minutes, then add tomato products and vegetables and the adobo paste. Simmer 10 more minutes. Enjoy

Personally I add ALOT more vegetables because I love them (instead of just 1/4 cup). Also I love spicy so I add alot more of the adobo paste and if you dont like spicy you can omit it, but it tastes really good and is one of those meals that tastes even better the next day!
