Veggie Stirfry E-mail
I just threw this together with whatever vegetables were in my frig. It came out so good, that I'm going to keep making it.

1 tablespoon olive oil
1 cup sliced mushrooms
1 small onion, sliced
1/2 cup vegetable broth
1 clove garlic - pressed
1 cup brussel sprouts, cut in half (microwave 3 minutes until done)
4 cups cauliflower (microwave 2-3 minutes until almost done)

Heat olive oil in large saute pan over med-high heat. Add sliced mushrooms and cook until browned (few minutes). Remove mushrooms. Add onions, cook until slightly browned. Add 1/2 of vegetable broth and cook down (this happens within minutes). Add garlic and remaining 1/4 cup of vegetable broth and cook for a minute or so. Add cooked brussel sprouts, cooked cauliflower & mushrooms and cook over high heat until they start to brown slightly -- a few minutes. Add a little more vegetable broth if the vegetables soak it all up. I like mine a little carmelized and dry. I added a little cayenne pepper for spice. This would be great over brown rice. I can't wait to have the rest for lunch tomorrow!
