Caribbean Baked Chicken w/ Mango (Phase 2) E-mail

 tried this recipe from my South Beach Diet cookbook today (actually I just got done eating it) and it was AWESOME...my husband loved it and I will definitly make it again!! here's the recipe:

Caribbean Baked Chicken with Mango

2 jalapeno chile peppers, halved and seeded (wear plastic gloves when handling)
1/2 onion (cut in half again)
2 cloves garlic, minced
1 slice (1/4 " thick) peeled fresh ginger
1 TB E.V.O.O.
1 TB white wine vinegar
1tsp Jerk Seasoning
1tsp ground allspice
1/4 tsp salt
4 (4-5 oz each) boneless skinless chicken breast (when they are cooked they are within the proper limits of meat per day)
1/2 Mango, peeled and finely chopped
1 TB chopped fresh cilantro


-Preheat oven to 450 degrees. Coat a 13x9 baking pan with cooking spray.

-In a food processor, combine the peppers, onion, garlic, ginger, oil, vinegar, jerk seasoning, allspice, and salt. Process until very finely chopped, stopping the machine a few times to scrape down the sides of the container.

-Spread the jalapeno mixture on both sides of the chicken breasts. Place the chicken breasts, skinned side up, in the baking pan.

-Bake for 30 minutes.

-Place the chicken on plates and scatter the mango on top. Sprinkle with the cilantro.

It isn't hot spicy like you would think either and the mango is a good offset to the tangyness that it does have.For whoever decides to try it, ihope you love it the way my hubby and I did!! ENJOY
