Cheesy Tuna & Rice (Phase 2) E-mail
This tastes much better than it sounds. Since I am on Phase II, I used less cheese and black olives than called for. I also didn't make the sauce, but I'll include that for non-smashers.

Cheesy Tuna & Rice
2 c cooked rice
1 c shredded cheddar cheese
1 - 6 1/2 oz tuna, drained
3/4 c sliced black olives
1 TBSP instant chopped onion
1 TBSP parsley flakes
1 tsp sesoned all salt
2 eggs, beaten
2 TBSP milk

Combine all ingredients - mix well. Spray 6 muffin cups with Pam. Divide mixture evenly into cups and bake at 375 for 15 min.

Serve with sauce if desired

Sauce
1/4c melted butter
1TBSP lemon juice
1/2 tsp all seaon salt
1/2 tsp parsley
