Yes, it can be done!
I didn't measure anything, so bear with me.
Brown rice (already cooked, about 2-1/2 to 3 c) cooked chicken (from roasted chicken, about 1 to 1-1/2 c) veggies (whatever you like, about 2 or 3 c) 1 large garlic clove 1 can navy beans (rinse) veggie broth (1/2 c to 1 c) 1 tsp poultry seasoning 1/2 tsp sage (fresh sage would be better) salt and pepper to taste
Cook rice, sautee veggies, and puree navy beans. Combine all ingredients in a casserole dish that has been coated with cooking spray. Bake at 400 for 30-45 min (depending on how deep the casserole dish is and if your veggies are done, i.e., carrots). Sprinkle a little cheese on top, if you like.
This makes 4-6 servings, so plan on feeding everyone or eating it for a few days!
