Mushroom and Meatball Soup (Phase 2) E-mail
Ingredients

3 or 4 portabella mushrooms, fins and stems removed
1-2 pounds moonlight mushrooms
3 carrots chopped up
3 ribs celery
half large onion sliced medium

These quantities are all by the seat of your pants.

Sweat 'rooms and veggies in large pot with some broth or wine. Add garlic salt, dried parsley, thyme, sweet basil and black pepper. Throw in a couple of splashes of wine (Marsalla) cover with water, beef or chicken stock. Simmer for 20 minutes.

Meatballs

1 pound ground turkey or beef.
1 egg and 1 egg white
¼ cup of cooked brown rice
¼ cup Romano grated cheese
Parsley, black pepper, garlic powder
Enough bread crumbs to hold mess together.
Mix well. Roll into balls about the size of a golf ball.

Drop in hot soup and simmer until the meat balls are and the veggies are cooked. About 10 - 20 minutes. Enjoy!
