This is so good and fulfilling. This recipe is perfect for one. Topping 1 tablespoon olive oil 1/4 cup chopped onions 1/4 cup sliced mushrooms 1 minced garlic clove 2 tablespoons vegetable broth 4 oz sea bass (fresh is best) 1-2 tablespoons olive oil Heat oven to 450. Saute onions in olive oil over medium high heat until translucent. Add mushrooms and cook until slightly browned on edges - a couple more minutes. Add garlic and cook 1 minute. Add vegetable broth and cook down until all broth is aborbed. In another pan, heat olive oil over medium high heat. Salt & pepper both sides of bass. Place skin side down and cook for 5 minutes. Turn over and cook for 45 seconds. If fish curls up, hold flat with a spatula during cooking. Place fish (skin side up) in a small ovenproof pan (line with aluminum foil to save dishwashing) and place in oven for 3-4 minutes. Serve topping over fish. The topping is sweet and crispy and a perfect complement to the fish. Bon Apetit!
